Freeze drying, in simple terms, is a process of removing moisture from something (usually food or medicine) by freezing it and then slowly heating it in a way that the ice turns directly into water vapor without going through a liquid phase. Thus Freeze Dryer preserves the item for a longer time while maintaining its shape, taste and nutrients because it avoids the damage that can happen with traditional drying methods, like heat drying or air drying.
